Ingredients
  • 2 Frozen Udon
  • 1 Shredded carrot (Thinly sliced)
  • 100 Ham
  • 2 Eggs
  • 2 Bok Choy
  • 1 cup Mushroom
  • 2 tablespoons Olive Oil
  • Sauce
  • 1 cup Water
  • 2 tablespoons Soy Sauce
  • 2 tablespoons Mirin
  • 2 tablespoons Sake
  • Sugar
  • Sesame Oil
  • Garnish
  • Sesame Seed (For garnish)
  • Green Onion
Instructions
  1. Prepare the Udon Noodles

    Cook the frozen udon noodles in a pot of boiling water until they are about 80% cooked (slightly undercooked).

  2. Cook the Eggs

    While the udon is cooking, heat 1 tablespoon of olive oil in a large skillet or wok over medium heat. Pour in the beaten eggs, scrambling them until fully cooked. Remove from the skillet and set aside.

  3. Cook the vegetables and ham
    1. In the same skillet, add another tablespoon of vegetable oil. Add the julienned carrots and stir-fry for 2-3 minutes until they begin to soften.
    2. Add bok choy to the skillet and stir-fry for 2-3 minutes until tender.
    3. Add the sliced shiitake mushrooms to the skillet and cook until they are soft and slightly browned.
    4. Add the ham to the skillet and cook until they are browned.
  4. Combine Ingredients
    1. Add the partially cooked udon noodles to the skillet.
    2. Pour in the sauce (water, mirin, sake, soy sauce, and sugar).
    3. Add the eggs to the skillet.
    4. Stir to combine and cook over medium heat until the noodles are fully cooked and the sauce is mostly absorbed and reduced.
  5. Serve

    Transfer the fried udon to bowls, garnish with black sesame seeds if desired, and serve immediately.

Note

- Feel free to swap out the ham for chicken, shrimp, or tofu for a different protein option.

- For a vegetarian version, omit the ham and add more vegetables or tofu.

- Adjust the sauce ingredients to your taste for more or less sweetness and saltiness.
