Doubles, a beloved street food, consists of soft, fluffy fried bread (bara) filled with curried chickpeas (channa) and a medley of tantalizing toppings. Ingredients
    Dough (Bara)
  • 2 cups Flour
  • 1 teaspoon Salt
  • 1 teaspoon Saffron powder
  • 1 teaspoon Cumin powder
  • 1 teaspoon Yeast
  • 1/3 cup Water
  • Chickpeas (Chana)
  • 1 can Organic Chick Peas
  • 1 1/2 tablespoon Curry Powder
  • 1 Green Seasoning
  • 3 Garlic (minced)
  • 1 Onion (diced)
  • 1 teaspoon Cumin powder
  • 1 tablespoon Olive Oil
  • 1 teaspoon Pepper Sauce (adjust according to the tolerance)
  • Salt & Pepper (adjust according to your taste)
  • 1/2 cup Water
Instructions
    Dough - making Bara
    • In a large bowl, combine flour, salt, saffron powder and cumin powder.
    • In a small bowl, place warm water, sugar and yeast, allow to rest for about 5 mins, until dissolved.
    • Add yeast mixture to flour and enough water to make a slightly firm dough. Mix well, cover with a damp cloth and allow to rise for 1 -2 hours.
  1. Chickpeas (Channa)
    • Heat oil in a pot, add garlic, onion, green seasoning, curry powder and cumin powder. Stir, cook and toast the ingredient for 1-2 mins.
    • Add 1/4 cup of water and saute for a few mins.
    • Add chick peas (drained and washed), stir to coat well and cook for 5 mins
    • Add 1 cup of water, salet, pepper and Bernie Pepper Sauce
    • Cover, lower heat and simmer until peas are very soft. 
    • Add more water if needed 
    • Season to taste with sale, if necessary
  2. Cook the Bara
    • Dough should be punched down and allowed to relax for 10 - 15 mins 
    • Use a tablespoon to separate dough into smaller pieces
    • Oil both of your hands as dough may stick to hands
    • Pat the smaller dough with both hands to flatten to a circle, ideally, to pat the dough on a non-stick baking pan
    • Oil in a pot, high heat, fry the dough in hot oil, turn once and drain on kitchen paper (the whole frying process should take less than 1 min)
  3. Assemble and Enjoy

  • Doubles are typically served with various toppings such as tamarind sauce, mango chutney, cucumber chutney, and hot pepper sauce. Feel free to customize your toppings according to your taste preferences.
  • Traditionally, doubles are eaten by hand, so be prepared for a deliciously messy experience!
