Prepare the Udon Noodles
Cook the frozen udon noodles in a pot of boiling water until they are about 80% cooked (slightly undercooked).

Cook the Eggs
While the udon is cooking, heat 1 tablespoon of olive oil in a large skillet or wok over medium heat. Pour in the beaten eggs, scrambling them until fully cooked. Remove from the skillet and set aside.

Cook the vegetables and ham
- In the same skillet, add another tablespoon of vegetable oil. Add the julienned carrots and stir-fry for 2-3 minutes until they begin to soften.
- Add bok choy to the skillet and stir-fry for 2-3 minutes until tender.
- Add the sliced shiitake mushrooms to the skillet and cook until they are soft and slightly browned.
- Add the ham to the skillet and cook until they are browned.

- Add the partially cooked udon noodles to the skillet.
- Pour in the sauce (water, mirin, sake, soy sauce, and sugar).
- Add the eggs to the skillet.
- Stir to combine and cook over medium heat until the noodles are fully cooked and the sauce is mostly absorbed and reduced.
