Season the Chicken
Flatten the chicken breasts to an even thickness using a meat mallet. Season both sides with garlic powder, cumin, oregano, paprika, salt, and pepper.

Prepare the Chicken
Dredge each chicken breast in flour, dip into beaten eggs, and then coat with breadcrumbs. I like to use this Fire & Smoke Chica Licka Bam Bam Coating.

Cook the Chicken
- Heat oil in a skillet over medium heat. Shallow fry the chicken until golden and crispy, about 4 minutes per side.
- Transfer the chicken to an oven preheated to 150°F to keep warm

Prepare the Sauce
- In a small bowl, mix mayonnaise, ketchup, Dijon mustard, salt, and pepper until well combined.

Assemble the Burger
- Toast the burger buns lightly. On each bun bottom, layer cheese, tomato slices, a piece of fried chicken, organic microgreens, pickles, and a generous spread of the sauce. Top with the other half of the bun.
